Banana chips, coconut and pineapple sourdough

I came up with the idea of a piña colada. These ingredients are already well known for working very well together. It wasn’t a huge bet, but into bread is definitely something new.

Give it a go, I’m sure you’ll love it.


  1. 950 gr strong flour

  2. 50 gr spelt flour

  3. 250 gr starter

  4. 25 gr salt

  5. 50 gr coconut oil

  6. 700 gr water

  7. 1cup banana chips

  8. 1 cup diced pineapple

  9. 1 cup shredded coconut


Mix the usual ingredients into a bowl: flour, water and starter until it is all a crumbly mix. Add the salt and knead for couple of minutes.

Rest it for half an hour and add the dry ingredients and the melted coconut oil.

Fold it few times until it shows signs of proving, roughly it takes couple of hours.

At this point it’s ready to go into the fridge. Leave it cold bulk proving for 1 day.

Then shape it and prove it for about 3 hours at room temperature.

Bake it at 220°c for 35 minutes if you cut at 650 gr.

Dust some nice shredded coconut, slice, spread some butter and enjoy it.
