Vegan sugar free banana bread

This is the best Vegan banana bread I have had in my life.

It is moist, soft, full of flavour and almost totally healthy. It also gives you the opportunity to use those very ripe bananas that your kids never really like to eat.

Yes I was forgetting it is made without sugar.


  1. 4 large bananas

  2. 1 teaspoon psyllium husk

  3. 2/3 cup of maple syrup

  4. 1 + 1/2 half cup whole meal flour ( organic)

  5. 1/2 cup coconut oil

  6. 3/4 cup coconut water

  7. 1 pinch salt ( abundant)

  8. 1 teaspoon ginger powder

  9. 1 teaspoon cinnamon

  10. 1 teaspoon mixed spices

  11. 1 teaspoon vanilla paste

  12. 1 teaspoon bucare soda

You can also add, seeds like chia, linseed, sesame or if you prefer nuts add sone walnut, hazelnut, macadamia or almonds. Both seeds and nuts can be added in the measure of 1 cup.

Now the mix is very simple to make. If you have a blender or a dough machine it will take you about3 minutes to do the mix. If you use the blender just blend all the ingredients together. If you use the mixing machine use the paddle and still put all the ingredients at once.

If you want to do it into a mixing bowl with a spoon you can too, it will take you max 10 minutes.

Start by smashing the bananas with the salt and the spices. Once they are nice and creamy add the psyllium husk and the coconut oil. Mix until all are well incorporated.

Now add the maple syrup, follow with the flour, slowly avoiding the creation of lumps.

Once the mixture is totally smooth but you still see some bits, those are probably just parts of the bananasa. This could be the step when you can fold in your nuts or seeds

Pre heat the oven at 180º C, now pour the mixture into a baking rectangular tin and bake for 1 hour. Using a tooth pick, check if the cake is ready by noticing if it comes out clean.

Make sure you rest the bread for about 10 minutes in the tin and then on a rack. You can enjoy it with some tea or coffee or just as a snack or breakfast for kids.
